Quinoa is a great addition to your diet in case you need something healthy, nourishing & undeniably tasty. of my favourite red quinoa recipes is the red quinoa & broccoli salad. For this recipe you will need:
two cups of cooked red quinoa
one little head of broccoli cut in to little florets
2-3 green onions (chopped)
6 oz of additional firm tofu (cubed)
one clove of garlic (minced)
two tablespoons of cooking oil
1/4 cup sliced almonds or walnuts
Salt & pepper to taste

Heat the oil in a medium skillet & sauté the garlic. Add the tofu & sprinkle salt & pepper. Stir fry for about three minutes or until you see the tofu brown a bit. Add the chopped broccoli & keep cooking until it becomes tender. Turn off the heat & in a separate bowl, combine the red quinoa, tofu & broccoli & mix them together. Add the almonds or walnuts & enjoy.

Another recipe that I love that is simple to make is the quinoa salad. The ingredients are:
For the dressing you will need:
one cup red quinoa
two cups water
6 radishes (diced)
one red onion (diced)
one massive tomato (chopped)
¾ cup crumbled goat cheese
two tablespoons capers (coarsely chopped)
two tablespoons fresh oregano (chopped)
Bring the water to a boil & put the quinoa, cook for 15 minutes or until the water is fully absorbed. Let the quinoa chilled & toss the salad ingredients with it except for the goat cheese. For the dressing, whisk the mustard & vinegar until smooth, drizzle in olive oil & whisk it continuously until the mixture starts to blend. Add salt & pepper according to your taste. Pour dressing over salad & toss. Top it with cheese.

four tablespoon red wine vinegar
1/3 cup olive oil
